Croatia vs Mexico - Croatian Meatballs - World Cup Foodies Recipe

Croatia was decided many moons ago at the beginning of the competition but it took me a while to decide on a Croatian dish that I would like to eat! That is actually an important aspect of this event, eat things you want to eat! I decided on the Croatian meatballs because it was something familiar but had a few twists that I had not had in meatballs before, so was still refreshing to eat. 

I think the story from this days football was the clinical way in which Netherlands dispatched Chile whilst still resting some key players. With this win I believe Holland have set down  a real marker to get to the final!


Ingredients (for 4)

400g of pasta
700g of tinned tomatos
450g of beef minced meat
1 egg
1 tsp paprika
1/2 tsp nutmeg
salt
pepper
1/2 tsp dried basil
1 tsp dried oregano
small bunch of chopped parsley
5 cloves of garlic
100g breadcrumbs
olive oil
Ajvar sauce

Instructions

1) Crush two cloves of garlic then add that to the meat, paprika, nutmeg, salt, pepper, oregano, egg and breadcrumbs into a big bowl
2) With your mixture knead it with your hands until the meat mixture is nice and bound together
3) Scoop out with a large tablespoon your mixture and roll in your hands the mixture into small balls
4) Fry the small balls in large hot frying pan that has some olive oil in it. Cook until golden all round. 
5) In a separate pan, heat the pan and add olive oil, tinned tomatoes and the remaining 3 garlic cloves (finely chopped)
6) Add salt, pepper, basil and your meatballs to the tomato sauce and then simmer for 20 minutes
7) Cook your pasta al dante style in salted boiling water to the instructions on the pack of what ever pasta it is that your using (8-12 minutes on average)
8) Stir in 2 tablespoons of Ajvar sauce into the tomato sauce after 15 minutes of cooking and  use the rest as sauce on the table
9) Drain your pasta and serve your meatballs with a generous amount of sauce on top!
